It’s summer and with current restrictions easing up socializing at home has become more and more common. That’s why this deliciously creamy kale walnut dip is the best appetizer for at home gatherings or backyard parties.
I started my urban garden later than usual this year which ended up being a blessing. The kale I planted is in over drive mode and I have bags and bags of kale to play with going into the summer. The excess kale was a perfect opportunity to come up with some easy recipes for entertainment. Thats where the inspiration for This deliciously creamy kale and walnut party dip came from.
Health Benefits of Kale
Kale is one of my favorite super greens. It is known as one of the most nutrient rich foods on earth. It’s high in antioxidants, calcium, vitamin C and iron amongst other nutrients. It also lowers cholesterol and has cancer fighting properties. Because of this it is the perfect veggie to sneak in for the kiddos or a nice health boost.
Alternative Uses
This dip is also great to mix in with pasta to make a cold pasta salad appetizer or as a creamy salad dressing for a different take on cobb salad. Another great alternative is as a sandwich spread for an awesome salami sandwich or a vegetarian cucumber sandwich. With so many uses this is a great meal compliment to make in larger quantities for easy to make lunches or for entertaining unexpected house guests.
Interchangeable Ingredients
This dish, like all Feisty Palate recipes, is flexible with its ingredients. I like using greek yogurt for creams and dips because it is lower in fat and a lighter option. This can be replaced though with sour cream or even a latin crema if you want a richer consistency. You can also try different nuts. If you’re feeling adventurous i think pecans may add a nice touch to the dip as well. I love to pair it with Rosemary Olive Oil Triscuits but potato chips or crackers pair just as well.

Ingredients
- 1 bunch kale chopped
- 1/3 cup walnuts
- 1 cup (5.3 oz) greek yogurt
- 1 tbsp mayo
- 1 tbsp philadelphia chive cream cheese
- 1 tsp spoon Hidden Valley ranch dip
- 1 tsp pepper
- 1 tsp garlic salt
- 1 tbsp salt
- 1/2 a lime
Instructions
This super delicious recipe is easy to make all you need is a food processor. First add the chopped kale into the processor and chop to small pieces.
add the entire cup of plain yogurt as well as the mayo, chive cream cheese, lime and all the spices except the salt and pepper. Continue to chop in the processor until creamy. Add salt and pepper to taste. If you want a creamier or thinner consistency add a little bit or water.
