Delicious Caviar and Smoked Salmon Bruschetta

If you guys are like me and love fancy appetizers that are easy to make this is probably up your alley. Smoked salmon and caviar bruschetta pairs beautifully with dry white wines and specially bubbles. I myself live for champagne and would drink it for breakfast if the budget allowed but cava, prosecco or cremants all work great.

While generally I’d give you a play by play on measurements this is probably a recipe you want to play by ear depending on how much you are making so take these quantities with a grain of salt.

you will need:

1/2 lb. of smoked salmon ( I LOVE Fresh Market but use your preference)
1 jar of caviar
1/2 pack cream cheese
1/4 cup olive oil
pinch of salt
pinch of pepper
1 spring of thyme
chopped chives or green onion
1 loaf of French bread
1 half lemon

Mix the olive oil, salt pepper and thyme leaves and spread on French bread slices. Bake at around 350 F for 5 min or until toasty. Mix the rest of the olive oil mixture with about half a pack of cream cheese and half a lemon. Spread this on to the bread slices. Add the sliced salmon on to the bruschetta pieces and top with a dollop of caviar and a sprinkle of chives. I love this pairing with a French 75 as well!
